Best Ever Traditional Breaded Fried Chicken
1 kg chicken - i used leg quarter cut into 3 pieces
Marinate with 1 teaspoon of salt and pepper, 1/2 teaspoon of Chinese five spice for at least 1 hour.
Tip: use fresh or completely thawed chicken. Not frozen or even cold. That will lead to uncooked inside and bloody chicken.
Prepare breading
Mix 5 tablespoons each of flour and cornstarch. Add 1 teaspoon each of salt, pepper and chinese five spice powder. Stir to combine.
This is the secret tip. Read carefully. Prepare the chicken, breading, abowl of very cold iced water and a clean plate.
Coat your chicken with breading then submerge it in the water quickly then coat with breading again and place on the clean dish. Repeat until all chicken are coated.
Frying- I used a non stick tefal Wok with cover. The pan must be makapal/heavy bottom or else the chicken will burn easily.
Heat vegetable or palm oil to cover at least 2 inches deep of the wok. Heat the but do not let it smoke. Add the chicken. DO NOT CROWD your pan. Don't put too many all at once. Medyo big ang wok ko, i fry 4-5 at a time. Adjust your heat to low-medium and COVER. Fry 10 minutes each side.
Do not turn your back or browse facebook. Check regularly. Cook until slight golden brown.
Put kitchen tissue to your dish to drain excess oil. Napagod ako kakatype. Mamaya na ang gravy recipe hehe.
