Homemade biscuits and gravy

 Homemade biscuits and gravy

You need self rising flour, milk, buttermilk, bacon, butter, and sausage (I use Jimmy Dean sage sausage)

1. Fry the bacon. Save the grease.
2. Put 2 cups of flour in bowl.
3. Take a spoon and make an indentation in the middle of the flour.
4. Pour 1 cup of buttermilk in the indentation you just made.
5. Use a fork to mix the flour and buttermilk.
6. You need to add buttermilk a little at a time until the batter becomes a mass that easily rolls around the bowl as you mix without it sticking to the sides of the bowl.
7 Sprinkle a flat surface with some flour.
8. Roll the dough out of the bowl onto the flat surface and sprinkle the top of it with flour. Flatten it out to a 3/4” to 1” thickness.
9. Fold the dough back over on itself and flatten it out again. Sprinkle it lightly with flour.
10. Repeat step 9.
11. Repeat step 9 again.
12. Preheat the oven to 425 degrees.
13. Put a pan, preferably a 10 inch iron skillet, in the oven for 2 minutes to warm it as the oven is preheating.
14. Remove the pan and grease it lightly with some of the bacon grease.
15. Pat the dough down to 3/4 to 1 inch thickness one last time and find something about 2 1/2 inches in diameter to use as a biscuit cutter. I use a plastic drinking cup for example.
16. Use flour to dust the surface of your cutter wherever the dough will touch it as you push it down while cutting biscuits. I generally just stick it in the flour bag and stick it down in the flour to coat it.
17. Cut the circles (biscuits) in the dough and place them in the warm skillet. It’s ok and preferred if the touch each other in the skillet.
18. Melt some butter and use a spoon to pour some on each biscuit. A small pastry brush is better but work with what you have.
19. Put the skillet in the oven for 20 minutes on the middle rack and check to see if the top is brown to the degree you like. Remember that the bottom is also browning. Remove when you see the degree of biscuit color you like.
Now let’s make gravy!
1. I use a deep iron pan but you can generally use a normal pot to do this.
2. Add a little bacon grease to coat the pan. Turn the heat on medium.
3. Put the whole roll of sausage in the pan and use a spatula to cut it into pieces. Keep cut cutting as it begins to cook. It will be tough at first but the finer you cut it up the better.
4. Keep cooking the sausage until it is full cooked. It will be dark brown and smell wonderful. Get a spoon and taste it.
5. There will be a lot of grease in the pan. That’s what you want.
6. Take 2 tablespoons of flour and stir it into the grease and sausage. It may ‘gum’ up. That’s ok no worries. If it does add a little bacon grease. You are making a ‘rue’ and you want it to be a semi liquid. For want of a better description it should stir like a milkshake stirs. Keep stirring the flour/grease all the time or it will burn.
7. The rue will begin to brown a little. No worries. I like it not to be creamy white.
8. Get your milk and listen carefully. The final consistency of your gravy will depend directly on how much milk you use and the rate at which you pour it into the hot rue. Repeat that back to me! Ok good. So while you stir begin to pour in the milk slowly. It will steam and get thick and pasty immediately. No worries. You are pouring cold milk into a hot pan so steam, while scary, is normal. Keep adding and stir like crazy (some people use a whisk, I do not).
Eventually the gravy will thicken and become more liquid. Simply add milk in this manner until the gravy is as thick as you want it to be. Some people
like tin gravy, I do not.
